Ingredients
1.5 lbs duck breast (halal), sliced
8 oz rice noodles
1 orange (zest and juice)
2 scallions (sliced)
1 carrot (shredded)
2 tbsp fresh cilantro (chopped)
1 tbsp toasted sesame oil
3 tbsp soy sauce
1 tsp grated ginger
2 cloves garlic (minced)
2 tbsp lime juice
1 tbsp honey
0.5 tsp sesame seeds (toasted)
Optional garnish: lime wedges
Instructions
Preheat oven to 375°F (190°C)
Blot duck dry, season with salt/pepper
Roast for 15-20 minutes until golden
Boil noodles 1-2 minutes, drain, briefly ice
Whisk orange zest/juice, soy sauce, ginger, garlic, sesame oil, lime juice, honey
Toss noodles with glaze, add carrot/scallions
Arrange duck slices over noodles
Sprinkle with cilantro, sesame seeds, toasted sesame oil
Notes
Substitute duck with halal chicken if needed
Adjust honey for sweetness
Store unused glaze up to 5 days
Chill noodles briefly for better glaze adhesion
