- 350g Bread Flour
- 180ml Whole Milk, warm (105°F)
- 5g Instant Yeast
- 40g Granulated Sugar
- 30g Unsalted Butter, room temperature
- 5g Salt
Instructions
- Whisk the flour and a portion of the milk in a small saucepan over low heat to create your tangzhong starter.
- Combine the remaining dry ingredients in a large bowl, keeping the yeast and salt on opposite sides.
- Add the prepared tangzhong and warm milk to the dry mixture, stirring until a shaggy dough forms.
- Knead the dough on a lightly floured surface for at least 10 minutes, gradually incorporating the softened butter until smooth and elastic.
- Place the dough in a greased bowl, cover with a warm towel, and allow to proof until doubled in size.
- Shape the dough into balls, let them rest, then roll into a rectangle and roll up tightly into a loaf pan for the final rise.
- Bake in a preheated oven until golden brown and the internal temperature reaches 190 degrees Fahrenheit.
Notes
Use a digital thermometer to ensure your milk is not too hot. Develop the gluten windowpane test to confirm the dough is fully kneaded. Keep your kitchen draft-free while proofing. Apply a light milk wash before baking for a lustrous golden crust.
