- 15 oz can Black Beans, rinsed and drained thoroughly
- 1 cup Corn (fresh, frozen, or canned)
- 2 whole Bell Peppers (red or yellow), diced
- 1/2 cup Red Onion, finely diced
- 1/2 cup Cilantro, freshly chopped
- 3 tbsp Lime Juice, freshly squeezed
- 2 tbsp Olive Oil, extra virgin
- 1 tsp Chili Powder
Instructions
- Dice the bell peppers and red onions into small, uniform pieces.
- Chop the fresh cilantro leaves finely, removing the thicker stems.
- Combine the rinsed black beans, corn, diced peppers, onions, and cilantro in a large mixing bowl.
- Whisk the olive oil, fresh lime juice, and chili powder in a small container to create the dressing.
- Pour the dressing over the vegetable mixture and toss gently until every piece is well coated.
- Chill in the refrigerator for at least thirty minutes before serving to allow all the flavors to meld together.
Notes
Rinse beans thoroughly to remove excess sodium and starch. Let the mixture marinate in the refrigerator for at least 30 minutes before serving. Store in an airtight container in the refrigerator for 3-4 days.
