A viral boat dip recipe is a creamy, loaded appetizer that combines the flavors of a loaded baked potato with a fun, shareable presentation perfect for parties, game day, and family gatherings.

  • Total Time: 35 minutes
  • Yield: 8-10 servings 1x

Ingredients

Scale
  • 1 cup sour cream
  • 8 oz cream cheese, softened
  • 1.5 cups shredded cheddar cheese
  • 1 lb ground beef, cooked
  • 45 green onions, chopped
  • 1/4 cup beef broth
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and black pepper, to taste

Instructions

  1. Brown one pound of ground beef in a large skillet over medium-high heat.
  2. Break the beef apart as it cooks until no pink remains, about five to seven minutes.
  3. Drain excess fat, reserving about two tablespoons of rendered fat in the pan.
  4. Add one-quarter cup of beef broth to the skillet.
  5. Stir well and scrape up the browned bits from the bottom.
  6. Let the liquid reduce by half.
  7. Season the beef with garlic powder, onion powder, salt, and black pepper.
  8. Remove the beef mixture from heat and let it cool slightly.
  9. Place softened cream cheese in a large mixing bowl.
  10. Whip with an electric mixer on medium speed for two minutes until smooth and fluffy.
  11. Add sour cream to the cream cheese.
  12. Blend for one minute until fully incorporated and smooth.
  13. Fold in shredded cheddar cheese with a spatula.
  14. Add the cooked seasoned beef to the cheese mixture.
  15. Fold gently until evenly combined.
  16. Fold in the white and light green parts of the chopped green onions.
  17. Reserve the dark green onion tops for garnish.
  18. Transfer the mixture to a 13-by-9-inch baking dish.
  19. Spread into an even layer about one and one-half inches thick.
  20. Bake uncovered at 350°F for fifteen to twenty minutes.
  21. Remove from the oven when the edges begin to bubble and the top starts to brown.
  22. Let the dip rest for three minutes.
  23. Garnish with reserved green onion tops and extra shredded cheddar cheese if desired.
  24. Serve immediately with sturdy potato chips, bread slices, or vegetable crudités.

Notes

Use fully softened cream cheese to prevent lumps. Freshly shredded cheddar melts better than pre-shredded cheese. Bake only until the edges bubble to keep the dip creamy and prevent separation. Store leftovers in an airtight container in the refrigerator for up to three days.
