- 1 cup sour cream
- 8 oz cream cheese, softened
- 1.5 cups shredded cheddar cheese
- 1 lb ground beef, cooked
- 4–5 green onions, chopped
- 1/4 cup beef broth
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and black pepper, to taste
Instructions
- Brown one pound of ground beef in a large skillet over medium-high heat.
- Break the beef apart as it cooks until no pink remains, about five to seven minutes.
- Drain excess fat, reserving about two tablespoons of rendered fat in the pan.
- Add one-quarter cup of beef broth to the skillet.
- Stir well and scrape up the browned bits from the bottom.
- Let the liquid reduce by half.
- Season the beef with garlic powder, onion powder, salt, and black pepper.
- Remove the beef mixture from heat and let it cool slightly.
- Place softened cream cheese in a large mixing bowl.
- Whip with an electric mixer on medium speed for two minutes until smooth and fluffy.
- Add sour cream to the cream cheese.
- Blend for one minute until fully incorporated and smooth.
- Fold in shredded cheddar cheese with a spatula.
- Add the cooked seasoned beef to the cheese mixture.
- Fold gently until evenly combined.
- Fold in the white and light green parts of the chopped green onions.
- Reserve the dark green onion tops for garnish.
- Transfer the mixture to a 13-by-9-inch baking dish.
- Spread into an even layer about one and one-half inches thick.
- Bake uncovered at 350°F for fifteen to twenty minutes.
- Remove from the oven when the edges begin to bubble and the top starts to brown.
- Let the dip rest for three minutes.
- Garnish with reserved green onion tops and extra shredded cheddar cheese if desired.
- Serve immediately with sturdy potato chips, bread slices, or vegetable crudités.
Notes
Use fully softened cream cheese to prevent lumps. Freshly shredded cheddar melts better than pre-shredded cheese. Bake only until the edges bubble to keep the dip creamy and prevent separation. Store leftovers in an airtight container in the refrigerator for up to three days.
