Instructions
- Heat the chicken or vegetable broth in a large pot over medium-high heat until it reaches a gentle simmer.
- Add the minced garlic and fresh ginger to the simmering broth.
- Stir constantly for about 2 minutes to release the aromatics.
- Pour in the soy sauce and mirin or honey.
- Whisk thoroughly to distribute the flavors evenly.
- Reduce the heat to medium-low and simmer gently for 5 minutes.
- Taste the broth and adjust with salt, white pepper, or additional soy sauce as needed.
- Bring a separate pot of salted water to a rolling boil.
- Add the ramen noodles and stir occasionally to prevent sticking.
- Cook the noodles according to package directions, usually 3 to 5 minutes, until al dente.
- While the noodles cook, sauté the sliced shiitake mushrooms in a small skillet over medium heat for about 4 minutes until tender.
- Drain the cooked noodles and rinse briefly under cool water to stop cooking.
- Divide the noodles between two large ramen bowls.
- Ladle the hot aromatic broth over the noodles.
- Arrange the sautéed mushrooms, bamboo shoots, and soft-boiled eggs over the noodles.
- Sprinkle with sliced green onions and toasted sesame seeds.
- Drizzle lightly with sesame oil.
- Serve immediately while hot.
Notes
Cook the noodles separately from the broth to prevent cloudy, starchy liquid. For jammy eggs, boil for exactly 6 minutes, then transfer to an ice bath before peeling. Add sesame oil only at the end to preserve its aroma.
