Instructions
- Wash the strawberries gently under cold running water to remove dirt.
- Remove the green stems carefully using a paring knife or by twisting them off.
- Pat each strawberry completely dry with paper towels to ensure the syrup adheres perfectly.
- Thread 3 to 4 strawberries onto long bamboo skewers while prepping the sugar mixture.
- Combine the granulated sugar and water in a deep, small saucepan over medium heat.
- Stir the mixture gently only until the sugar dissolves completely into the water.
- Stop stirring immediately and let the syrup simmer undisturbed until it reaches the hard-crack stage.
- Use a candy thermometer to monitor the temperature, aiming for exactly 300°F (150°C).
- Remove the pan from the heat immediately once the target temperature is reached.
- Dip each skewer of strawberries into the hot syrup with a swift, swirling motion.
- Place the coated skewers on a piece of parchment paper to cool and allow the sugar to set for at least 5 to 10 minutes before serving.
Notes
Ensure the strawberries are bone-dry before dipping, as even a tiny drop of water can ruin the syrup texture. Work quickly once the syrup hits 300°F as it begins to thicken rapidly. Avoid stirring the syrup during boiling to prevent crystallization.
