- 2 tablespoons unflavored gelatin powder or 2 packets
- 1/4 cup cold filtered water for blooming
- 1.5 cups hot water or liquid such as coconut water, herbal tea, fresh juice, or bone broth
- 2 to 3 teaspoons stevia or erythritol
- 1 to 2 tablespoons fresh lemon juice
- 1/2 cup fresh berries optional
- 1/8 teaspoon sea salt
Instructions
- Pour 1/4 cup cold filtered water into a small mixing bowl.
- Sprinkle the unflavored gelatin powder evenly across the surface without stirring.
- Allow the gelatin to bloom for 3 to 5 minutes until spongy.
- Heat 1.5 cups of your chosen liquid in a saucepan over medium-high heat until small bubbles form around the edges.
- Pour the hot liquid slowly into the bloomed gelatin while stirring gently with a whisk.
- Continue stirring for about one minute until completely smooth.
- Add stevia or erythritol and whisk for 30 seconds until dissolved.
- Stir in fresh lemon juice.
- Add sea salt and mix until balanced.
- Taste and adjust sweetness or tartness as desired.
- Pour the mixture into individual serving glasses, silicone molds, or one large container.
- Add fresh berries evenly if using.
- Place containers in the refrigerator for at least 4 hours or overnight.
- Remove from the refrigerator 5 minutes before serving for the best texture.
Notes
Always bloom the gelatin before adding hot liquid to prevent lumps. Keep the hot liquid between 160°F and 180°F for best setting power. Start with less sweetener and adjust gradually to avoid an artificial aftertaste.
