  • 2 to 3 teaspoons stevia or erythritol
  • 1 to 2 tablespoons fresh lemon juice
  • 1/2 cup fresh berries optional
  • 1/8 teaspoon sea salt

Instructions

  1. Pour 1/4 cup cold filtered water into a small mixing bowl.
  2. Sprinkle the unflavored gelatin powder evenly across the surface without stirring.
  3. Allow the gelatin to bloom for 3 to 5 minutes until spongy.
  4. Heat 1.5 cups of your chosen liquid in a saucepan over medium-high heat until small bubbles form around the edges.
  5. Pour the hot liquid slowly into the bloomed gelatin while stirring gently with a whisk.
  6. Continue stirring for about one minute until completely smooth.
  7. Add stevia or erythritol and whisk for 30 seconds until dissolved.
  8. Stir in fresh lemon juice.
  9. Add sea salt and mix until balanced.
  10. Taste and adjust sweetness or tartness as desired.
  11. Pour the mixture into individual serving glasses, silicone molds, or one large container.
  12. Add fresh berries evenly if using.
  13. Place containers in the refrigerator for at least 4 hours or overnight.
  14. Remove from the refrigerator 5 minutes before serving for the best texture.

Notes

Always bloom the gelatin before adding hot liquid to prevent lumps. Keep the hot liquid between 160°F and 180°F for best setting power. Start with less sweetener and adjust gradually to avoid an artificial aftertaste.
