Ingredients

  • 14 ounces soft silken tofu, drained
  • 3 tablespoons white miso paste
  • 2 tablespoons rice vinegar
  • 1 tablespoon mirin
  • 1 tablespoon toasted sesame oil
  • 3 tablespoons filtered water, plus more as needed
  • 1 teaspoon white sesame seeds, for garnish

Instructions

  1. Drain the silken tofu by opening the package over the sink and pouring out excess liquid.
  2. Crumble the drained silken tofu directly into a blender.
  3. Add the white miso paste to the blender.
  4. Pour in the rice vinegar.
  5. Drizzle in the toasted sesame oil.
  6. Add the mirin.
  7. Pour in 3 tablespoons filtered water.
  8. Secure the blender lid and blend on high speed for 45 to 60 seconds.
  9. Stop halfway through blending and scrape down the sides with a spatula.
  10. Blend again until completely smooth and creamy.
  11. Check the consistency of the dressing.
  12. Add 1 tablespoon filtered water at a time if the dressing is too thick, blending for 15 seconds after each addition.
  13. Transfer the finished dressing to a glass jar or airtight container.
  14. Sprinkle with white sesame seeds immediately before serving.
  15. Stir briefly before pouring if any separation occurs.

Notes

Use soft silken tofu, not firm tofu, for the smoothest texture. Start with less water and add gradually until the dressing reaches your preferred consistency. Store refrigerated in an airtight container and stir before serving.
