- 1 box sugar-free pink gelatin powder, 6 ounces
- 1 cup boiling water
- 1 cup cold water or sugar-free juice
- 1 cup Greek yogurt or sugar-free whipped topping
- 1 cup fresh berries, optional
- 1–2 tablespoons liquid sweetener, optional
Instructions
- Pour the sugar-free pink gelatin powder into a large mixing bowl.
- Boil 1 cup of water to 212°F.
- Pour the boiling water over the gelatin powder while stirring constantly.
- Stir for about 2 minutes until all gelatin granules are completely dissolved.
- Allow the mixture to cool for about 5 minutes.
- Pour in 1 cup cold water or sugar-free juice.
- Stir thoroughly until the cold liquid is fully combined with the warm gelatin.
- Allow the mixture to cool completely to room temperature.
- Fold in the Greek yogurt or sugar-free whipped topping using a spatula.
- Mix gently until the gelatin mixture looks creamy and slightly marbled.
- Fold in the fresh berries if using.
- Add liquid sweetener to taste if desired.
- Pour the mixture into individual serving cups or one large bowl.
- Refrigerate for at least 4 hours, or overnight, until fully set.
- Serve chilled straight from the refrigerator.
Notes
Use truly boiling water so the gelatin dissolves completely. Let the gelatin cool before adding yogurt to prevent curdling, and chill for at least 4 hours for the best firm, jiggly texture.
