A high-protein, low-calorie dessert designed specifically for post-operative bariatric surgery patients and anyone following a protein-focused diet. This smooth, silky gelatin combines unflavored gelatin, sugar-free cranberry juice, and whey protein powder to create a satisfying treat that supports your nutritional goals while tasting absolutely delicious.

  • Total Time: 4 hours 15 minutes
  • Yield: 8 servings 1x

Ingredients

Scale
  • 4 packets (1 oz) Unflavored Gelatin
  • 2 cups Sugar-Free Cranberry Juice
  • 1 cup Boiling Water
  • 1 cup (approximately 8 scoops) Vanilla Whey Protein Powder

Instructions

  1. Pour one cup of boiling water into a large mixing bowl, add four packets of unflavored gelatin, and stir continuously for two minutes until the gelatin completely dissolves and no granules remain visible.
  2. Let the gelatin solution cool for five minutes at room temperature.
  3. Pour two cups of sugar-free cranberry juice into the cooled gelatin mixture and stir gently but thoroughly for one minute to combine evenly.
  4. Add one cup of vanilla whey protein powder to the gelatin and juice mixture, then whisk for two minutes using an electric mixer on low speed or by hand until completely blended and free of clumps.
  5. Pour the prepared mixture into eight individual serving cups or one large serving dish, place in the refrigerator immediately, and allow to chill for at least four hours (preferably overnight) until it sets completely.

Notes

Allow the gelatin-water mixture to cool for exactly five minutes before adding the juice to prevent the heat from breaking down the protein powder. Using an electric hand mixer prevents clumping and ensures a smoother final texture. Store covered in the refrigerator for 5 to 7 days, or freeze for up to 3 months.
