1 tablespoon lime juice
1 teaspoon chili powder
1/2 teaspoon garlic powder
1/2 cup crumbled cotija cheese
1 tablespoon chopped fresh cilantro
Lime wedges for garnish
Instructions
Heat a skillet over medium heat and sauté corn kernels for 5-7 minutes until tender
In a bowl, mix mayonnaise, crema, lime juice, chili powder, and garlic powder to create the sauce
Combine cooked corn with the sauce and toss to coat evenly
Transfer corn mixture into serving cups, top with crumbled cotija cheese and chopped cilantro
Garnish with lime wedges and additional chili powder if desired
Notes
Use frozen corn for a quicker prep; thaw before cooking
Cotija can be substituted with feta or shredded mozzarella if unavailable
