Ingredients

1/4 cup olive oil
1/4 cup fresh lemon juice
2 garlic cloves, minced
1 tsp dried oregano
1 tbsp chopped fresh parsley
1 tsp red pepper flakes (optional)
Salt and black pepper to taste

Instructions

Combine cannellini beans, artichoke hearts, cherry tomatoes, red onion, olives, and herbs in a large bowl.
In a small bowl, whisk olive oil, lemon juice, garlic, oregano, red pepper flakes, salt, and pepper.
Pour dressing over salad and toss to coat. Chill for 15-30 minutes before serving.

Notes
