1 head green cabbage, thinly sliced
1 cup farro, rinsed
2 tablespoons olive oil
1 teaspoon olive oil
2 garlic cloves, minced
1 teaspoon ground cumin
1 teaspoon dried oregano
1/2 teaspoon red pepper flakes, optional
Salt and freshly ground black pepper, to taste
1/2 cup crumbled feta cheese
1 cup cherry tomatoes, halved
1/2 cup pitted Kalamata olives
1/4 cup crumbled feta cheese (optional, for garnish)
1/4 cup chopped fresh parsley
1/4 cup chopped fresh dill
1 red onion, thinly sliced and pickled (optional)
1 cup cooked chickpeas
Zest and juice of 1 lemon
6 tablespoons olive oil, for the dressing
2 tablespoons white wine vinegar (or substitute with lemon juice for non-alcoholic)
Freshly ground black pepper, to taste

Instructions

Preheat oven to 350°F (175°C). Spread rinsed farro on a baking sheet and roast for 15-20 minutes, until fragrant and slightly golden. Set aside to cool slightly.
Heat 2 tablespoons olive oil in a large skillet over medium heat. Add cabbage, garlic, cumin, oregano, and red pepper flakes. Cook for 10-12 minutes, until cabbage is tender and slightly caramelized, stirring occasionally. Season with salt and pepper.
In a large bowl, combine the warm farro, sautéed cabbage, cherry tomatoes, chickpeas, olives, and pickled red onion (if using). Stir to mix evenly.
Make the dressing by whisking together the lemon zest, lemon juice, and olive oil. Season with salt and pepper. Pour the dressing over the mixture and toss until coated.
Fold in the crumbled feta and herbs. Taste and adjust seasoning as needed.
Serve warm or at room temperature. Garnish with additional feta, herbs, or a drizzle of olive oil.

Notes

For a gluten-free version, use certified gluten-free farro or substitute with cooked quinoa.
For a dairy-free version, omit feta or use a dairy-free alternative.
Store leftovers in an airtight container in the refrigerator for up to 3 days.
This recipe can be doubled and prepared ahead for meal prep.
