Ingredients
1 pound ground turkey
1/2 cup breadcrumbs
1 large egg
2 cloves garlic, minced
1/4 cup chopped fresh basil
1 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 cup olive oil
1 can (28 oz) crushed tomatoes
1/2 cup chopped fresh basil (additional for garnish)
1/2 cup water
1 cup couscous
Instructions
Preheat oven to 375°F (190°C)
In a bowl, mix ground turkey, breadcrumbs, egg, garlic, chopped basil, oregano, salt, and pepper until combined
Form mixture into 16–18 meatballs
Heat olive oil in a skillet over medium heat; cook meatballs until browned, 4–5 minutes
Add crushed tomatoes, dried oregano, salt, and pepper; let simmer 10–15 minutes
Meanwhile, pour water into couscous, cover, and let sit 5 minutes
Fluff couscous and serve meatballs with sauce
Notes
For juicier meatballs, use lean ground turkey with some fat
Couscous can be substituted with quinoa or rice if preferred
Meatballs and sauce freeze well for up to 3 months
