A refreshing and protein-rich Mediterranean salad featuring smashed cucumbers, chickpeas, and crumbled feta, blended with lemon juice, olive oil, and fresh herbs. Perfect as a light main or vibrant side dish.

Ingredients

2 large cucumbers
1 (15-ounce) can chickpeas, drained and rinsed
1/2 red onion, finely chopped
3 tablespoons extra virgin olive oil
Juice of 1 large lemon
1 cup crumbled feta cheese
1/4 cup pitted Kalamata olives, chopped
2 cloves garlic, minced
1/4 cup chopped fresh parsley
Salt and pepper to taste
1 teaspoon dried oregano
4 cups baby spinach or arugula

Instructions

Finely chop the red onion and let it sit for 5 minutes to mellow.
Place the cucumbers on a clean kitchen towel and gently pat them dry.
Using the flat side of a heavy chef’s knife or a mallet, gently smash the cucumbers to create a texture that releases some juice while keeping them mostly intact.
In a large bowl, combine the smashed cucumbers, chickpeas, and red onion.
In a small bowl, whisk together the olive oil, lemon juice, minced garlic, oregano, salt, and pepper to make the dressing.
Pour the dressing over the cucumber and chickpea mixture, gently tossing to coat.
Add the chopped olives, crumbled feta, and fresh parsley. Fold in the baby spinach or arugula just before serving.
Adjust salt and pepper to taste. Serve immediately or refrigerate for a few hours to let the flavors meld.

Notes

Smashing the cucumbers too much can make the salad watery—aim for texture over mush!
For a vegan version, omit the feta or use a vegan alternative.
Store leftovers in an airtight container in the fridge for up to 3 days. The salad keeps well and stays fresh.
