Ingredients
2 tablespoons olive oil
1 onion, diced
3 cloves garlic, minced
1 red bell pepper, chopped
1 teaspoon cumin
1 teaspoon smoked paprika
1/2 teaspoon cinnamon
1 can crushed tomatoes (14 oz)
1 can white beans, drained (15 oz)
2 cups fresh spinach
4 large eggs
Salt and pepper, to taste
Fresh parsley, chopped
Instructions
Heat olive oil in a large skillet over medium heat. Sauté onion until softened.
Add garlic and red bell pepper; cook until tender.
Stir in cumin, smoked paprika, and cinnamon for 1 minute to toast.
Add crushed tomatoes, white beans, and 1/2 teaspoon salt; simmer for 10 minutes.
Stir in spinach until wilted. Create 4 small wells in the mixture.
Carefully crack an egg into each well. Cover and cook until eggs are set (4-6 minutes).
Garnish with fresh parsley before serving.
Notes
Toast spices briefly to enhance their depth.
Use fresh tomatoes if canned is unavailable.
Serve with crusty bread or rice for a heartier meal.
Store leftovers in an airtight container for up to 3 days.
