Ingredients

1.5 lbs small red potatoes, cubed
2 tbsp capers, rinsed
2 tbsp fresh dill, chopped
2 tbsp olive oil
1 tbsp lemon juice
1 tbsp red wine vinegar
Quartered red onion
1 tsp salt, divided
Black pepper to taste

Instructions

Bring water to a boil. Add potatoes and 1/2 tsp salt; cook 10-12 minutes until tender but firm. Drain, rinse under cold water, and pat dry
In a bowl, whisk olive oil, lemon juice, vinegar, capers, dill, and remaining 1/2 tsp salt
Add cooled potatoes, red onion, and pepper to the dressing; toss to coat
Chill for 20 minutes before serving to let flavors meld

Notes

For best flavor, refrigerate for at least 1 hour before serving
Use fresh dill for maximum aroma
Dressing can be made separately for easier coating
Store in an airtight container for up to 4 days
