Ingredients

1 lb ground turkey (85% lean)
1/4 cup fresh parsley, chopped
1/2 onion, finely chopped
1 tsp ground cumin
1 tsp ground coriander
1/2 tsp salt
1/4 tsp black pepper
2 tbsp olive oil
2 garlic cloves, minced
1 tbsp lemon juice
4 cups cherry tomatoes
1 large English cucumber
1/4 cup red onion, thinly sliced
2 tbsp fresh dill, chopped
8 whole wheat pita bread
3 tbsp olive oil (salad dressing)
2 tbsp lemon juice (salad dressing)
1 tbsp sumac
4 cups mixed greens
4 lemon wedges (for serving)

Instructions

Preheat grill or grill pan to medium-high heat (400°F/200°C). In a bowl, combine turkey, parsley, onion, cumin, coriander, salt, pepper, and garlic. Mix until well combined. Form into 8 meatballs.
Brush oil on both sides of meatballs. Grill for 6 minutes per side until charred and cooked through. Let rest 2-3 minutes.
Meanwhile, prepare salad: Combine cherry tomatoes, cucumber slices, red onion, and dill in a bowl. Toss with salad dressing (mix 3 tbsp olive oil with 2 tbsp lemon juice and 1 tbsp sumac). Chill 10 minutes.
Assemble bowls: Divide mixed greens among 4 bowls. Add 2 kofta meatballs per bowl. Ladle cucumber salad on top. Serve with warm pita and lemon wedges.

Notes

Use a non-stick grill basket if making indoors.
Substitute kofta with roasted quinoa or lentils for vegetarian option.
Salad can be made 24 hours ahead.
Serve with basmati rice instead of pita if preferred.
