Ingredients

4 ripe peaches
4 cups arugula
1 cup crumbled feta cheese
1/4 cup fresh mint leaves, chopped
3 tablespoons extra virgin olive oil
1 tablespoon fresh lemon juice
1 teaspoon honey
Salt and pepper to taste

Instructions

Preheat grill to medium-high heat. Slice peaches and brush with olive oil.
Grill peaches cut-side down for 3-4 minutes until charred. Remove and let cool slightly.
In a large bowl, combine arugula, feta, and mint.
In a small bowl, whisk olive oil, lemon juice, honey, salt, and pepper to create the dressing.
Pour dressing over the salad, then top with grilled peaches. Toss gently before serving.
