Ingredients
8 cups arugula
4 ripe peaches, sliced
1 cup crumbled feta cheese
1/2 cup thinly sliced red onion
2 tablespoons extra virgin olive oil
1 teaspoon honey
2 tablespoons fresh lemon juice
1–2 tablespoons balsamic glaze
Fresh mint leaves, for garnish
Instructions
Preheat a grill or grill pan to medium-high heat.
Brush peach slices with olive oil and grill for 1-2 minutes per side until charred.
In a bowl, sauté red onion with 1 tablespoon olive oil for 3 minutes until tender.
Toss arugula with lemon juice and honey.
Top with grilled peaches, feta, and cooked red onion.
Drizzle with balsamic glaze and garnish with mint.
Notes
Peak peaches yield best flavor; substitute arugula with spinach or mixed greens.
Simplify by grilling peaches and onions in separate oiled bowls to prevent sticking.
Chill leftovers for 1 hour before serving for a fresher taste.
