Ingredients
1 large eggplant (about 500g), sliced
1 cup extra virgin olive oil
4 oz fresh burrata cheese
1/4 cup fresh flat-leaf parsley, chopped
1/4 cup fresh mint, chopped
1 tbsp dried oregano
1 lemon, zested and juiced
Salt and black pepper to taste
Instructions
Preheat grill to medium-high heat (around 400°F/200°C)
Brush eggplant slices with olive oil and season with salt and pepper
Grill eggplant slices for 3-4 minutes per side until tender and deeply charred
Arrange grilled slices on a serving platter in a staggered pattern
Top each eggplant slice with a portion of cold burrata, gently tearing it apart
Sprinkle with chopped parsley, mint, and oregano
Finely grate lemon zest over the platter and drizzle with remaining olive oil
Sprinkle a pinch of salt and grind black pepper fresh over the dish
Serve immediately with additional lemon wedges on the side
Notes
For indoor cooking, use a grill pan or stove-top grill over medium-high heat
Fresh burrata is best for maximum creaminess and authenticity
Let burrata sit at room temperature 20 minutes before serving for optimal texture
