Ingredients
2 medium English or Persian cucumbers, thinly sliced
2 cups halved Roma tomatoes
1 small red onion, thinly sliced
2 ripe avocados, diced
3 tablespoons extra virgin olive oil
2 tablespoons fresh lemon juice
1 tablespoon fresh parsley, chopped
1 tablespoon fresh mint, chopped
Salt to taste
Instructions
1. Thinly slice cucumbers and let sit in a sieve for 10 minutes to drain excess water.
2. Combine tomatoes, drained cucumbers, and red onion in a large bowl.
3. Whisk olive oil, lemon juice, parsley, mint, and salt in a separate bowl.
4. Gently mix dressing into salad ingredients.
5. Add diced avocado last to prevent browning.
6. Let rest 10 minutes before serving chilled.
Notes
Use 1/4 teaspoon of vegan feta cheese as optional garnish.
For meal prep, store dressing separately and assemble just before eating.
Tomatoes and cucumbers absorb more salad and lemon juice over time.
