Ingredients

1 pound ground chicken
1/2 cup crumbled feta cheese
1/4 cup finely chopped fresh dill
1/4 cup finely chopped fresh mint
1 garlic clove, minced
Zest of 1 lemon
2 tablespoons olive oil
1 teaspoon dried oregano
Salt and freshly ground black pepper to taste
4 whole wheat or brioche burger buns
Toppings: sliced cucumber, lettuce, tomato, red onion
Additional sauce: 1/2 cup Greek yogurt
1 small English cucumber, grated
2 tablespoons fresh lemon juice
1 teaspoon honey
1/4 cup chopped parsley

Instructions

Preheat cast iron skillet over medium heat
In a bowl, mix ground chicken, feta, dill, mint, garlic, lemon zest, oregano, salt, pepper, and 1 tablespoon olive oil
Form into 4 equal patties
Cook patties 5-6 minutes per side until golden brown and internal temperature reaches 165°F
While cooking, prepare sauce: combine Greek yogurt with grated cucumber, lemon juice, 1 tablespoon olive oil, and 1 teaspoon salt in a bowl
Strain sauce in a fine mesh sieve for 10 minutes to remove moisture
To assemble, toast buns, spread cucumber sauce, and layer patty with toppings
Drizzle with 1 tablespoon olive oil and mint oil (optional)

Notes

For extra flavor, let seasoned chicken rest in the fridge 30 minutes before shaping.
Mint oil can be substituted with plain olive oil for drizzling if unavailable.
Leftover sauce stores well refrigerated for 3-4 days. Adjust consistency with more yogurt if needed.
