Ingredients

Ground chicken (2 lbs)
Pita buns (4)
Greek yogurt (1 cup, plain and non-fat)
Cucumber (1 medium, peeled and diced)
Fresh dill (1/4 cup, chopped)
Garlic (3 cloves, minced)
Lemon zest (1 tsp from 1 lemon)
Lemon juice (2 tbsp from 1 lemon)
Olive oil (2 tbsp, divided)
Parsley (1/4 cup, chopped)
Dried oregano (1 tsp)
Red onion (1/2 small, thinly sliced)
Tomato (1 large, thickly sliced)
Feta cheese (1/2 cup, crumbled)
Salt (1 tsp, plus more for slaw)
Black pepper (to taste)

Instructions

In a large bowl, combine ground chicken with chopped parsley, dried oregano, lemon zest, minced garlic, 1 tbsp olive oil, salt, and black pepper. Mix until just combined.
Shape the chicken into 4 evenly sized patties, ensuring they hold together firmly.
Heat a skillet over medium-high heat with 1 tbsp olive oil. Cook patty 4-5 minutes per side until golden brown and cooked through (internal temperature 165°F/74°C).
In a separate bowl, fold Greek yogurt with diced cucumber, chopped dill, and a pinch of salt. Add lemon juice; stir until evenly combined.
Assemble burgers by layering chicken patties on pita buns, topped with tzatziki slaw, tomato slices, and feta cheese. Serve immediately.

Notes

Tzatziki slaw can be made up to 24 hours in advance.
Replace pita buns with brioche or lettuce wraps for a gluten-free option.
