2 tablespoons pure honey
1 teaspoon vanilla extract
1 cup fresh figs (or 1/2 cup dried figs, rehydrated)
1/3 cup shelled pistachios, coarsely chopped
Optional: Greek yogurt (dairy or plant-based) for added creaminess
Instructions
Whisk chia seeds, almond milk, honey, and vanilla extract in a bowl until combined.
Cover and refrigerate for 4 hours or overnight until a pudding forms.
Slice rehydrated dried figs (if using) over the base, then stir in chopped pistachios.
Chill for an additional 30 minutes before serving. Optional: top with additional pistachios and a drizzle of honey.
