Ingredients
2 slices of crusty bread (sourdough or whole grain)
1 can (2-3 oz) oil-packed sardines (no pork derivatives)
1 tbsp olive oil
1 medium tomato, sliced
1 tbsp fresh parsley, chopped
1 tbsp fresh dill, chopped
1 lemon, zested and juiced (1–2 tsp)
Salt and pepper to taste
Instructions
Preheat oven or toaster to 350°F (175°C)
Toast bread until crisp and golden
Spread olive oil on each toast
Flake sardines over the toast
Layer tomato slices on top
Mix parsley, dill, lemon zest, and juice in a small bowl
Spoon herb mixture over the toasts
Season with salt and pepper
Notes
Use rainbow chard or arugula for a greens variation
Swap sardines with halal-certified tuna if preferred
Store sardines in oil in the fridge for up to 2 days
