Ingredients
4 whole wheat pitas
4 large eggs
1 ½ cups diced tomatoes (fresh or canned)
½ cup pitted Kalamata olives
½ cup crumbled feta cheese
1 tbsp olive oil
1 tsp dried oregano
Salt to taste
Ground black pepper to taste
Instructions
Preheat oven to 375°F (190°C)
Brush pitas with olive oil and place on a baking sheet
Crack eggs directly onto each pita, seasoning with salt, pepper, and oregano
Top with tomatoes, olives, and feta cheese
Bake for 15 minutes until eggs are set and pita is crisp
Notes
Use pitted olives for convenience
Substitute feta with vegan cheese if preferred
Store leftovers in an airtight container for up to 2 days
Serve warm with a side of Greek yogurt if desired
