Ingredients
4 whole wheat wraps
8 large eggs
4 cups fresh spinach
1/2 cup Greek yogurt (unsweetened)
1 medium cucumber (grated)
2 garlic cloves (minced)
1 tablespoon fresh lemon juice
1 teaspoon fresh dill (finely chopped)
1 tablespoon olive oil
1/4 cup crumbled feta cheese (optional, halal-certified)
Salt and pepper to taste
Instructions
Whisk eggs in a bowl with a pinch of salt. Heat olive oil in a skillet over medium heat.
Add eggs and scramble until just set (about 3 minutes). Remove from pan and set aside.
In the same skillet, sauté spinach until wilted (1-2 minutes). Season with salt and pepper.
In a separate bowl, mix Greek yogurt, grated cucumber, minced garlic, lemon juice, fresh dill, and a drizzle of olive oil to make tzatziki.
Warm wraps slightly. Layer scrambled eggs, sautéed spinach, and spoonful of tzatziki onto each wrap.
Top with crumbled feta (if using). Fold edges of wrap and serve fresh or wrap in foil.
Notes
Tzatziki can be prepared up to 24 hours ahead.
Substitute feta with halal feta or omit for vegan version.
Use leftover cooked vegetables or grilled vegetables for extra heartiness.
Burritos freeze well for up to 2 weeks—reheat in toaster oven or microwave.
