Ingredients
1 1/2 lbs ground beef (halal)
1 cup cooked rice (save 2 tbsp for paste)
2 bell peppers (red, yellow, or green), sliced
1 medium onion, finely chopped
4 garlic cloves, minced
1 tsp ground cumin
1 tsp ground coriander
1 tsp smoked paprika
1/2 tsp salt
1/4 tsp black pepper
2 tbsp olive oil
1/4 cup chopped fresh parsley
1/4 cup chopped fresh mint
1 tbsp lemon juice or white vinegar
Instructions
Preheat oven to 200°C (390°F). Form half of the rice into a paste and mix into ground beef with cooked rice, garlic, cumin, coriander, paprika, salt, and pepper
Roll mixture into 16 meatballs
Heat 1 tbsp olive oil in a large oven-safe skillet over medium-high heat. Sear meatballs 2-3 minutes per side
Add onions and peppers; sauté 5 minutes. Stir in remaining rice, herbs, and 1 cup water.Bring to simmer
Cover and transfer to oven. Bake 20-25 minutes until rice absorbs liquid
Drizzle with lemon juice or vinegar before serving
Notes
Use ground lamb for halal dietary needs
Add cherry tomatoes for extra sweetness
Substitute quinoa for rice if preferred
Let kofta rest 5 minutes before baking to hold shape
Adjust spice levels by adding chili flakes if desired
Keep oven temperature below 375°F if using a glass lid
