1 1/2 cups crumbled goat cheese
1/4 cup olive oil
1/4 cup chopped sun-dried tomatoes
1/4 cup chopped fresh tomatoes (or 2 tbsp sun-dried tomatoes)
1/2 cup pitted kalamata olives, chopped
1 tbsp fresh oregano (or 1 tsp dried)
1 garlic clove, minced
1/2 tsp salt
1/4 tsp black pepper
1 tbsp lemon juice
2 tbsp chopped fresh basil or parsley (optional)
3 tbsp chopped red onion (optional)

Instructions

Preheat oven to 375°F (190°C)
In a bowl, mix crumbled goat cheese with olive oil, salt, pepper, oregano, and garlic until smooth
Transfer mixture to a baking dish and shape into a log
Bake for 20 minutes, then stir in chopped tomatoes and olives
Return to oven and bake 5 more minutes until golden
Mix in lemon juice before serving

Notes

For a vegan option, substitute goat cheese with crumbled vegan cheese
Store leftovers in an airtight container in the fridge for up to 3 days
