6 chicken thighs, bone-in, skin-on
8 ounces feta cheese, cubed
2 cups cherry tomatoes, whole
3 tablespoons extra virgin olive oil
4 garlic cloves, thinly sliced
1 tablespoon dried oregano (or fresh oregano)
1/2 teaspoon red pepper flakes
1 lemon, for juice and wedges
Instructions
Preheat oven to 400°F (200°C)
Season chicken thighs with salt and pepper
Arrange chicken on a large rimmed baking sheet
Top with feta, cherry tomatoes, and garlic
Dress with olive oil, oregano, and red pepper flakes
Bake for 35-40 minutes until chicken is golden and tomatoes burst
Let rest 10 minutes before slicing chicken
