4 (6-ounce) cod fillets
2 pounds cherry tomatoes, halved
4 garlic cloves, minced
2 lemons (1 juice, 2 zest)
2 tablespoons olive oil
Fresh herbs (oregano, dill, and parsley, mixed)
1 teaspoon sea salt
1/2 teaspoon black pepper
1/2 teaspoon dried thyme
1/4 teaspoon dried rosemary
Instructions
Preheat oven to 450°F (230°C)
Arrange cod fillets in a single layer on a parchment-lined baking sheet
Season fillets with sea salt, black pepper, thyme, and rosemary
Top each with cherry tomato halves, minced garlic, and lemon zest slices
Drizzle olive oil and lemon juice evenly over the fillets
Bake for 15 minutes, then broil for 3–5 minutes until tomatoes blister
Let rest 5 minutes before serving
Notes
Use room-temperature tomatoes for even cooking
Olive oil can be substituted with avocado oil for similar benefits
Cod should be opaque and flake easily when done
