Instructions
- Puree the fresh mango chunks in a blender until the texture is completely smooth.
- Whisk the flour, sugar, and baking powder in a large mixing bowl until fully combined.
- Combine the mango puree, milk, eggs, and vanilla extract in a separate medium bowl.
- Create a well in the center of your dry ingredients to prepare for the addition of wet liquids.
- Pour the wet mixture into the dry mixture and stir gently until just combined.
- Heat a non-stick skillet over medium-low heat and grease lightly with butter or oil.
- Drop approximately one-quarter cup of batter onto the hot surface for each pancake.
- Flip the pancakes once bubbles form on the surface and edges appear set.
- Cook the opposite side until golden brown and serve warm with your favorite toppings.
Notes
Avoid overmixing the batter to ensure light and fluffy pancakes. Allow the batter to rest for 10 minutes before cooking. Keep the heat on medium-low because the sugar in the fruit can cause pancakes to burn quickly.
