- 1.5 pounds ground beef, 80/20
- 2 large sweet potatoes, about 1.5 pounds
- 1.5 cups full-fat cottage cheese
- 1/4 cup honey
- 1–2 teaspoons red pepper flakes
- 4 tablespoons olive oil, divided
- 1 teaspoon garlic powder
- 1.5 teaspoons sea salt, divided
- 1 teaspoon black pepper, divided
- 1/2 teaspoon paprika
- 2 green onions, sliced
- 1 tablespoon fresh lime juice
Instructions
- Preheat the oven to 425 degrees Fahrenheit.
- Wash and peel the sweet potatoes.
- Cut the sweet potatoes into uniform 1-inch cubes.
- Slice the green onions, keeping the white and green parts separate.
- Toss the cubed sweet potatoes with 2 tablespoons olive oil, 1/2 teaspoon sea salt, and 1/2 teaspoon black pepper.
- Spread the sweet potatoes in a single layer on a parchment-lined sheet pan.
- Roast for 18-22 minutes, stirring halfway through, until the edges are golden and the centers are fork-tender.
- Heat 2 tablespoons olive oil in a large skillet over medium-high heat.
- Add the ground beef and break it apart with a wooden spoon.
- Cook for about 8 minutes until no pink remains.
- Drain excess fat if desired.
- Return the beef to the skillet.
- Add garlic powder, paprika, 1 teaspoon sea salt, and 1/2 teaspoon black pepper.
- Stir constantly for 2 minutes to distribute the seasonings evenly.
- Pour the honey into a small saucepan over low heat.
- Add 1-2 teaspoons red pepper flakes.
- Stir constantly for 2-3 minutes, then remove from heat and let cool slightly.
- Divide the roasted sweet potatoes evenly among 4 bowls.
- Top each bowl with one-quarter of the seasoned ground beef.
- Add about 1/3 cup cottage cheese to each bowl.
- Drizzle each bowl with about 1 tablespoon warm hot honey.
- Squeeze fresh lime juice over each bowl.
- Top with sliced green onions and serve immediately.
Notes
Cut the sweet potatoes evenly so they roast at the same rate. Use full-fat cottage cheese for the creamiest texture. Keep the hot honey on low heat so the red pepper flakes bloom without burning, and add the lime juice just before serving for the brightest flavor.
