Instructions
- Preheat the oven to 350 degrees Fahrenheit.
- Line a 9-inch round cake pan with parchment paper, extending the edges upward for easy removal.
- Whisk together almond flour, unsweetened cocoa powder, baking powder, sea salt, and 1 cup unsweetened shredded coconut in a large mixing bowl.
- Create a small well in the center of the dry ingredients.
- Break the dark chocolate chips into smaller pieces if desired, then stir them into the dry mixture.
- Pour melted coconut oil into a separate bowl.
- Add maple syrup or coconut sugar and whisk until smooth and cohesive.
- Add the eggs one at a time, beating well after each addition.
- Stir in vanilla extract until fully combined.
- Pour the wet mixture into the well of the dry ingredients.
- Fold gently with a rubber spatula until just combined and no flour streaks remain.
- Transfer the batter to the prepared cake pan.
- Smooth the top with the back of a spoon or offset spatula.
- Sprinkle the remaining 1/4 cup unsweetened shredded coconut evenly over the top.
- Bake for 28 to 32 minutes, until a toothpick inserted in the center comes out with a few moist crumbs but no wet batter.
- Cool in the pan for 10 minutes.
- Turn the cake out onto a wire rack and cool completely before slicing.
Notes
Use room-temperature eggs for the best texture and measure almond flour with the spoon-and-level method. Do not overmix the batter, and begin checking the cake at 28 minutes to keep it moist and tender.
