Ingredients
12 oz rotini pasta
1 cup cherry tomatoes
1 cup black beans, drained and rinsed
1 cup corn kernels
1 bell pepper, diced
1 red onion, finely chopped
1 avocado, diced
1 cup shredded cheddar cheese
1/4 cup cilantro, chopped
2 tbsp lime juice
1 tbsp olive oil
1 tsp taco seasoning
1/2 tsp ground cumin
1/2 tsp chili powder
Salt and pepper to taste
Instructions
Bring 4 cups water to a boil. Cook rotini according to package instructions. Drain and chill in ice water, then drain again.
In a large bowl, combine cooked rotini, cherry tomatoes, black beans, corn, bell pepper, red onion, avocado, and cheddar cheese.
In a separate bowl, whisk lime juice, olive oil, taco seasoning, cumin, chili powder, salt, and pepper.
Pour dressing over pasta mixture. Add cilantro and gently toss to combine. Chill for at least 30 minutes before serving.
Notes
Chill for up to 4 hours for enhanced flavor.
Use vegan queso cheese for a dairy-free version.
Store leftovers in an airtight container in the fridge for up to 2 days.
