Ingredients

1 lb (450g) ground turkey
5 oz (140g) fresh spinach
1/2 cup sun-dried tomatoes (oil-free or in water, drained)
1/2 cup feta cheese, crumbled
1/2 small onion, finely chopped
3 cloves garlic, minced
1 tsp dried oregano
1/2 tsp smoked paprika
1 tbsp olive oil
1 tbsp fresh lemon juice
Salt and pepper, to taste

Instructions

Preheat the oven to 375°F (190°C).
Heat olive oil in a large oven-safe skillet over medium heat.
Add onions and garlic to the skillet. Sauté for 2-3 minutes until fragrant and slightly softened.
Add ground turkey. Cook, breaking it apart with a spatula, until browned and cooked through (about 6-8 minutes).
Stir in oregano, paprika, salt, and pepper. Mix well.
Add sun-dried tomatoes and fresh spinach to the skillet. Cook for 2-3 minutes until the spinach is wilted.
Remove from heat and stir in crumbled feta cheese and lemon juice.
Optional: Transfer the skillet to the preheated oven for 5 minutes to crisp up edges and blend the flavors.
Serve as is or over rice, couscous, or with warm pita.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 2 days or frozen for up to 2 months.
For extra protein, mix in a can of drained chickpeas with the turkey.
Use vegan feta or omit cheese for a vegan version.
