Ingredients
4 Italian-style chicken sausages
1 red bell pepper, sliced
1 yellow bell pepper, sliced
1 large onion, halved and sliced
2 cups diced tomatoes
2 cloves garlic, minced
2 tablespoons olive oil
1 teaspoon dried oregano
1 teaspoon dried basil
Salt to taste
Freshly ground black pepper to taste
Juice of 1 lemon
Optional addition: pitted green olives or capers for briny depth
Instructions
Preheat oven to 400°F (200°C)
Pat sausage dry and cut into 1/2-inch thick slices
Heat olive oil in a skillet over medium-high heat; brown sausage slices, 3-4 minutes
Push sausage to the center of the pan, add onions and garlic, sauté 5 minutes
Add peppers, salt, pepper, oregano, and basil; cook 5-7 minutes until softened
Stir in diced tomatoes and simmer 10-15 minutes
Finish with a squeeze of lemon juice before serving
