Ingredients

1 pound ground chicken
1/4 cup finely chopped onion
2 cloves garlic, minced
1/3 cup fresh parsley, chopped
1 teaspoon ground cumin
1 teaspoon paprika
1 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons olive oil
1 cup couscous, uncooked
1 1/2 cups water or broth
1 cup cherry tomatoes, halved
1/2 English cucumber, diced
1/2 cup red onion, thinly sliced
1/2 cup plain yogurt, preferably Greek
Zest and juice of 1 lemon
2 tablespoons chopped fresh dill or mint (optional)
Olive oil for drizzling (optional)

Instructions

Preheat oven to 400°F (200°C)
In a large bowl, mix together ground chicken, onion, garlic, parsley, cumin, paprika, oregano, salt, and pepper to create the meatball mixture.
Using damp hands, shape the mixture into 1.5-inch meatballs.
In a large oven-proof skillet, heat olive oil over medium heat. Add meatballs and cook for 5 minutes until browned on all sides.
Place skillet in oven and bake for 15 to 20 minutes, or until meatballs are cooked through.
While meatballs bake, prepare couscous by combining with water or broth in a medium saucepan. Bring to a boil, then reduce heat, cover, and simmer for 5 minutes, or until liquid is absorbed.
Fluff couscous with a fork and set aside.
In a small bowl, mix yogurt, lemon zest, and lemon juice to create the drizzle. Stir in optional herbs.
To assemble, divide couscous among bowls. Layer meatballs and vegetables on top, then drizzle with yogurt sauce. Serve warm.
