- 2 packets unflavored gelatin powder, 14 grams
- 2 cups 100% pure cranberry juice
- 2 cups filtered water
- 3 tablespoons fresh lemon juice
- 2 to 3 teaspoons stevia or monk fruit sweetener
- 1/4 teaspoon sea salt
- 1/2 cup fresh raspberries, optional topping
- 1/4 cup whipped coconut cream, optional
Instructions
- Pour 1/2 cup cold filtered water into a small mixing bowl.
- Sprinkle the unflavored gelatin powder evenly across the surface.
- Allow the gelatin to bloom undisturbed for 5 minutes.
- Heat 2 cups cranberry juice in a medium saucepan over medium heat until steam rises and small bubbles form around the edges.
- Pour the hot cranberry juice slowly over the bloomed gelatin while stirring constantly with a whisk.
- Whisk until all gelatin granules dissolve completely.
- Continue stirring for 2 minutes until the base is smooth and uniform.
- Add the fresh lemon juice and whisk thoroughly.
- Stir in the stevia or monk fruit sweetener gradually.
- Taste and adjust sweetness as needed.
- Add the sea salt and whisk for 30 seconds.
- Pour in the remaining filtered water.
- Stir well for 1 minute to combine.
- Pour the mixture into individual serving cups or one large serving dish.
- Let the gelatin cool to room temperature for 30 minutes.
- Transfer to the refrigerator.
- Chill for at least 4 hours, preferably overnight, until firm and slightly jiggly.
- Remove from the refrigerator 30 minutes before serving for the best texture.
- Top with fresh raspberries and whipped coconut cream if desired.
- Serve chilled.
Notes
Bloom gelatin in cold water before adding hot liquid to prevent lumps. Heat cranberry juice until steaming but not boiling, and add lemon juice only after the gelatin fully dissolves. Refrigerate for at least 4 hours for the best firm yet jiggly texture.
