  • Total Time: 4 hours
  • Yield: 6 servings 1x

Ingredients

Scale
  • 2 packets (14g) unflavored gelatin powder
  • 2 cups filtered water
  • 1 1/2 cups fresh mixed berries
  • 1 cup fresh citrus fruit segments
  • 2 tablespoons raw honey
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon pure vanilla extract
  • Pinch of sea salt

Instructions

  1. Measure 2 cups of filtered water into a small saucepan and bring to a gentle boil over medium heat.
  2. Pour the hot water into a heat-safe mixing bowl.
  3. Sprinkle the unflavored gelatin powder slowly over the hot water while stirring continuously.
  4. Continue stirring for 30 seconds, until the gelatin completely dissolves and the mixture becomes clear.
  5. Add the raw honey, fresh lemon juice, vanilla extract, and a pinch of sea salt.
  6. Stir thoroughly until all ingredients are evenly combined.
  7. Allow the gelatin mixture to cool at room temperature for approximately 15 minutes.
  8. Prepare six serving containers or one large glass dish by lightly rinsing with cold water.
  9. Cut the berries and citrus fruit into bite-sized pieces.
  10. Pour half of the cooled gelatin mixture into the prepared containers or dish.
  11. Distribute half of the prepared fruit pieces evenly over the gelatin layer.
  12. Pour the remaining gelatin mixture carefully over the fruit.
  13. Arrange the remaining fruit pieces on top, pressing lightly so they settle slightly into the gelatin.
  14. Transfer the assembled gelatin dessert to the refrigerator.
  15. Chill for at least 4 hours, or until completely set.
  16. Remove from the refrigerator 15 minutes before serving for a softer texture.

Notes

Allow the gelatin mixture to cool before adding the fresh fruit to preserve its color and texture. Chill for at least 4 hours before serving, and store covered in the refrigerator for the best results.
