- 1 cup fresh citrus fruit segments

Instructions
- Measure 2 cups of filtered water into a small saucepan and bring to a gentle boil over medium heat.
- Pour the hot water into a heat-safe mixing bowl.
- Sprinkle the unflavored gelatin powder slowly over the hot water while stirring continuously.
- Continue stirring for 30 seconds, until the gelatin completely dissolves and the mixture becomes clear.
- Add the raw honey, fresh lemon juice, vanilla extract, and a pinch of sea salt.
- Stir thoroughly until all ingredients are evenly combined.
- Allow the gelatin mixture to cool at room temperature for approximately 15 minutes.
- Prepare six serving containers or one large glass dish by lightly rinsing with cold water.
- Cut the berries and citrus fruit into bite-sized pieces.
- Pour half of the cooled gelatin mixture into the prepared containers or dish.
- Distribute half of the prepared fruit pieces evenly over the gelatin layer.
- Pour the remaining gelatin mixture carefully over the fruit.
- Arrange the remaining fruit pieces on top, pressing lightly so they settle slightly into the gelatin.
- Transfer the assembled gelatin dessert to the refrigerator.
- Chill for at least 4 hours, or until completely set.
- Remove from the refrigerator 15 minutes before serving for a softer texture.
Notes
Allow the gelatin mixture to cool before adding the fresh fruit to preserve its color and texture. Chill for at least 4 hours before serving, and store covered in the refrigerator for the best results.
