A hearty, satisfying pasta dish that combines tender spaghetti noodles with a rich, savory meat sauce and melted cheese. This dirty spaghetti recipe delivers genuine comfort food flavor with creamy, cheesy sauce clinging to every strand.

  • Total Time: 50 minutes
  • Yield: 6 servings 1x

Ingredients

Scale
  • 2 pounds ground beef
  • 1 pound spaghetti pasta
  • 1 large yellow onion, diced
  • 6 garlic cloves, minced
  • 1 (28-ounce) can crushed tomatoes
  • 3 tablespoons tomato paste
  • 3 tablespoons olive oil
  • 2 cups shredded mozzarella cheese
  • 1 cup grated parmesan cheese
  • 1 cup beef broth
  • 2 teaspoons Italian seasoning
  • 1/2 teaspoon red pepper flakes, optional
  • 1 teaspoon freshly ground black pepper
  • Salt, to taste
  • Fresh basil and additional parmesan cheese, optional for garnish

Instructions

  1. Fill a large pot with water, add salt, and bring it to a rolling boil for the spaghetti.
  2. Heat the olive oil in a large heavy-bottomed pot over medium-high heat until shimmering.
  3. Add the ground beef in a single layer and cook undisturbed for 4 to 5 minutes to develop a deep brown crust.
  4. Break the beef into smaller crumbles and continue cooking until completely browned, about 3 to 4 minutes more.
  5. Drain excess fat if desired, leaving enough in the pot to coat the bottom.
  6. Add the diced onion and cook for 5 to 6 minutes, stirring frequently, until softened and translucent.
  7. Stir in the minced garlic and cook for 1 minute until fragrant.
  8. Add the tomato paste and cook for 2 minutes, stirring constantly to deepen its flavor.
  9. Pour in the crushed tomatoes and beef broth, then stir in the Italian seasoning and red pepper flakes.
  10. Bring the sauce to a gentle simmer, reduce the heat to low, and simmer uncovered for 20 to 25 minutes.
  11. Season the sauce with salt and freshly ground black pepper to taste.
  12. While the sauce simmers, cook the spaghetti in the boiling salted water according to package directions until al dente.
  13. Reserve 2 cups of pasta cooking water, then drain the spaghetti.
  14. Return the cooked spaghetti to the pot and add the meat sauce, stirring gently to coat every strand.
  15. Reduce the heat to low and stir in the shredded mozzarella cheese and grated parmesan cheese until completely melted into the sauce.
  16. Add reserved pasta water 1 tablespoon at a time as needed until the sauce reaches a creamy consistency.
  17. Taste and adjust the seasoning as needed.
  18. Serve hot, garnished with fresh basil and additional parmesan cheese if desired.

Notes

Brown the ground beef without stirring at first to build deep savory flavor. Simmer the sauce uncovered so it thickens properly, reserve pasta water for a silky finish, and add the cheeses over very low heat to keep the sauce smooth and creamy.
