3 English cucumbers, sliced
½ cup nonfat sour cream (or plain Greek yogurt for a healthier option)
1 small red onion, thinly sliced
2 cloves garlic, minced
1 tablespoon lemon juice
1 tablespoon chopped fresh dill (or 1 teaspoon dried dill)
1 teaspoon salt
½ teaspoon black pepper
Instructions
1. Thinly slice cucumbers and red onion.
2. In a bowl, mix sour cream, minced garlic, lemon juice, dill, salt, and black pepper until smooth.
3. Fold dressing into cucumber and onion mixture.
4. Refrigerate for at least 30 minutes before serving to allow flavors to meld.
Notes
For extra creaminess, use chilled sour cream.
Add a splash of apple cider vinegar for brighter acidity if desired.
Store in an airtight container in the fridge for up to 24 hours.
Substitute sour cream with non-dairy yogurt for a vegan version.
