Ingredients
2 1/2 cups all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
2 tablespoons ground cinnamon
10 tablespoons unsalted butter, softened
1 1/2 cups granulated sugar
2 large eggs
1 teaspoon vanilla extract
3/4 cup milk
3 medium apples, peeled, cored, and finely diced
Instructions
Preheat oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan.
In a bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon.
In another bowl, cream butter and sugar until light and fluffy.
Beat in eggs one at a time, then stir in vanilla and milk.
Gradually add the dry ingredients to the wet mixture, folding until just combined.
Fold in the diced apples.
Pour batter into the prepared loaf pan.
In a small bowl, mix 2 tablespoons sugar and 1 teaspoon cinnamon for a swirl.
Sprinkle the cinnamon sugar evenly over the top of the batter and gently swirl it with a knife.
Bake for 55 minutes or until a toothpick inserted in the center comes out clean.
Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
Notes
For extra moisture, brush the bread with melted butter just before baking. Store in an airtight container for up to 3 days or freeze for up to 3 months. Substitute apple cider or juice for milk to enhance apple flavor.
