Instructions
- Preheat the oven to 350°F and position the rack in the center.
- Line an 8×8-inch square baking pan with parchment paper, leaving overhang on two sides.
- Spread 1/4 cup flour for the cookie dough filling on a small baking sheet.
- Bake the flour for 3 minutes at 350°F, then cool completely.
- Combine 1 cup semi-sweet chocolate chips and 1/2 cup unsalted butter in a microwave-safe bowl.
- Heat in 30-second intervals, stirring between each interval, until melted and smooth.
- Whisk together 3/4 cup all-purpose flour, cocoa powder, sea salt, and baking powder in a separate bowl.
- In another bowl, whisk eggs with 1 teaspoon vanilla extract until pale and slightly frothy.
- Add granulated sugar and 1/4 cup packed brown sugar to the egg mixture.
- Whisk until thick, pale, and ribbony.
- Pour the melted chocolate mixture into the egg mixture.
- Fold gently with a rubber spatula until no chocolate streaks remain.
- Fold the dry ingredients into the chocolate mixture until just combined.
- Pour the brownie batter into the prepared pan and spread evenly.
- Beat softened butter with 1/4 cup packed brown sugar until light and fluffy.
- Add 1/2 teaspoon vanilla extract and mix until incorporated.
- Fold in the cooled heat-treated flour and mini chocolate chips until the filling resembles cookie dough.
- Drop small dollops of cookie dough filling across the brownie batter.
- Gently swirl the cookie dough into the brownie batter with a knife or skewer.
- Bake for 18 to 20 minutes, until a toothpick inserted into the brownie portions comes out with a few moist crumbs.
- Cool in the pan for 10 minutes.
- Transfer to a wire rack and cool completely for at least 45 minutes.
- Cut into 16 equal brownie bites and serve.
Notes
Heat-treat the flour for the cookie dough filling to make it safe for raw-style cookie dough. Do not overbake the brownie bites, and allow them to cool completely before cutting for clean edges.
