Ingredients
1 lb ground beef
8 (8-inch) flour tortillas
2 cups shredded cheddar cheese
1 cup shredded Monterey Jack cheese
1 medium onion, finely chopped
3 cloves garlic, minced
2 tbsp taco seasoning
1 tbsp olive oil
Salt and pepper
Instructions
1. Cook beef in skillet: Heat oil in a large skillet. Cook ground beef, onion, garlic, taco seasoning, salt, and pepper until browned and crumbly
2. Assemble quesadillas: Place 2 tortillas in overlapping stacks on flat surface. Divide beef mixture among 4, top with cheese, then fold tortillas closed
3. Cook in skillet: Heat skillet over medium heat. Add quesadillas and cook 2-3 minutes per side until deeply golden and cheese is fully melted
Notes
Use nonstick or cast-iron skillet for best crispiness
Can substitute half tortillas with corn/whole wheat
Taco seasoning can be homemade with chili powder, cumin, paprika
Let sit 1-2 minutes before slicing to set cheese
