Ingredients

12 oz rotisserie chicken (halal, shredded)
1 lb penne pasta (uncooked)
1/2 cup buffalo sauce (no alcohol)
1 cup crumbled blue cheese
1/2 cup mayonnaise
1/4 cup buttermilk (non-alcoholic)
2 tbsp lemon juice
1/2 cup diced celery
1 teaspoon Dijon mustard
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
Salt and pepper to taste

Instructions

Cook pasta according to package instructions, drain, and cool.
Shred halal rotisserie chicken and mix with buffalo sauce.
Combine mayonnaise, buttermilk, lemon juice, Dijon mustard, garlic powder, and onion powder to make dressing.
In a large bowl, mix cooled pasta, buffalo chicken, celery, and crumbled blue cheese.
Stir dressing into the salad until all ingredients are coated.
Chill for at least 1 hour before serving with garnish.

Notes

Chill for at least 2 hours for best flavor development.
Substitute blue cheese with gorgonzola or feta for non-blue cheese variations.
