Ingredients

1 lb shelled and deveined shrimp
2 large ripe tomatoes, chopped
1 cup couscous
2 tablespoons olive oil
4 garlic cloves, minced
1 lemons, zested and juiced
1/4 cup fresh parsley, chopped
1 teaspoon red pepper flakes
1 teaspoon salt
Black pepper to taste

Instructions

Heat olive oil in a large skillet over medium heat
Add minced garlic and cook until fragrant
Stir in chopped tomatoes and red pepper flakes, sauté until softened
Add shrimp, season with salt and pepper, and cook 2-3 minutes per side until opaque
Remove shrimp and mix into the couscous (prepared with warm water per package instructions)
Return shrimp to the skillet with juice and zest of two lemons and fresh parsley
