Ingredients
4 whole wheat tortillas
1 cup store-bought or homemade hummus
1/2 cup chopped cucumber
1/2 cup diced cherry tomatoes
1/4 cup shredded red bell pepper
2 tablespoons finely chopped red onion
2 tablespoons Kalamata olives
1/4 cup crumbled feta cheese
1 tablespoon chopped fresh parsley
Optional: 1 teaspoon olive oil drizzle
Instructions
Warm tortillas per package instructions
Spread 2-3 tablespoons hummus onto each tortilla
Layer cucumber, tomatoes, bell pepper, red onion, olives, and feta
Sprinkle with parsley
Fold sides inward and roll tightly to enclose
Serve immediately or refrigerate until ready to eat
Notes
Substitute feta with vegan cheese if needed
Wrap tightly in foil for lunch prep
Add falafel or grilled zucchini for extra protein
Store wrapped leftovers in airtight container for up to 2 days
