Ingredients
4 cod fillets (6 oz each)
2 cups cherry tomatoes, halved
1/2 cup Kalamata olives, pitted
2 cloves garlic, minced
2 tbsp olive oil
1 tsp dried oregano
1 tbsp fresh parsley, chopped
1 onion, sliced
1 lemon, zested and juiced
Salt and pepper to taste
Instructions
Preheat oven to 400°F (200°C)
Line a baking sheet with parchment paper
Season cod with salt, pepper, oregano, lemon zest, and parsley
Drizzle 1 tbsp olive oil over fillets
Arrange tomatoes and onions around fish
Sprinkle garlic and olives over fillets
Bake 25 minutes until cod is flaky and golden
Garnish with fresh parsley
Notes
Cod can be swapped with halibut or sea bass
Add extra garlic or herbs for stronger flavor
Use oven-safe dish for easier serving
